Slow Cooker Buttered Cabbage and Onions

Ingredients

  • 1 large green cabbage, cored and roughly chopped

  • 1 large yellow onion, thinly sliced

  • 3 tablespoons unsalted butter

  • ½ cup low-sodium vegetable broth or water

  • ½ teaspoon garlic powder

  • ½ teaspoon black pepper

  • ½ teaspoon dried parsley

  • 1 teaspoon lemon juice

  • Salt, to taste, if appropriate for your diet

Instructions

1. Prepare the vegetables

Remove the tough outer leaves from the cabbage. Cut the cabbage into quarters, remove the core, and chop it into bite-sized pieces. Slice the onion thinly.

2. Add everything to the slow cooker

Place the chopped cabbage and sliced onion in the slow cooker. Add the butter in small pieces over the top.

Pour in the broth or water. Sprinkle with garlic powder, black pepper, and dried parsley.

3. Slow cook

Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours.

The cabbage will release additional moisture as it cooks. Stir once or twice during cooking if convenient.

4. Add lemon

When the cabbage is tender, stir in the lemon juice. Taste and adjust the seasoning.

If your diet allows salt, add a small amount. Otherwise, rely on the herbs, garlic, pepper, and lemon for flavor.

5. Serve

Serve the cabbage warm as a side dish with chicken, fish, rice, or another main course.

Tips for Better Flavor

  • Use unsalted butter so you can control the amount of sodium.

  • Don’t add too much liquid—the cabbage naturally releases moisture while cooking.

  • For a slightly sweeter flavor, add a small amount of sliced onion or a pinch of dried herbs.

  • A little lemon juice at the end brightens the dish without requiring additional salt.

  • For a richer version, increase the butter slightly, keeping in mind that this also increases calories and saturated fat.

Kidney-Friendly Considerations

Cabbage can fit into many kidney-conscious meal plans and is relatively lower in potassium than some other vegetables. However, kidney diets are individualized. If you have chronic kidney disease, your required limits for potassium, sodium, phosphorus, fluids, and protein depend on your kidney function and blood-test results.

For a kidney-conscious version, choose unsalted butter and low-sodium broth—or simply use water. Avoid regular bouillon cubes and heavily salted seasoning mixes, which can add substantial sodium.

Also remember that this recipe is intended as a nutritious side dish; it does not directly lower creatinine. Persistent or elevated creatinine should be evaluated by a healthcare professional.

Nutrition-Friendly Serving Idea

For a balanced meal, serve a moderate portion of the cabbage and onions alongside an appropriate portion of grilled chicken or fish and a grain such as rice. Add another suitable vegetable or fruit according to your individual dietary requirements.

This simple combination provides a comforting, home-cooked meal without relying on heavily processed sauces or excessive salt.
