Vegan Butter Pecan Ice Cream

Ingredients

For the Ice Cream

  • 2 cans (400 ml each) full-fat coconut milk

  • ½ cup maple syrup

  • 2 tablespoons coconut sugar or brown sugar

  • 1 teaspoon vanilla extract

  • ¼ teaspoon salt

  • 1 tablespoon cornstarch

  • 1 tablespoon vegan butter

  • ¾ cup pecans, roughly chopped

Instructions

1. Toast the Pecans

Place the chopped pecans in a dry skillet over medium-low heat. Toast for 3–5 minutes, stirring frequently, until fragrant and lightly browned.

Be careful not to burn them. Remove from the heat and set aside to cool.

2. Prepare the Ice Cream Base

Pour the coconut milk into a saucepan. Add the maple syrup, coconut sugar, vanilla, salt, and cornstarch.

Whisk thoroughly while the mixture is still cold to prevent lumps.

Place the saucepan over medium heat and cook for approximately 5–7 minutes, stirring continuously. The mixture should become slightly thicker but should not reach a vigorous boil.

Remove the saucepan from the heat and stir in the vegan butter.

3. Chill

Transfer the mixture to a clean container and allow it to cool at room temperature for a short time.

Cover and refrigerate for at least 4 hours, preferably overnight. The mixture needs to be thoroughly chilled before churning.

4. Churn

5. Freeze

Allow the ice cream to sit at room temperature for 5–10 minutes before scooping.

Pour the chilled mixture into a shallow freezer-safe container. Freeze for about 45 minutes, then remove and stir vigorously.

Repeat this process every 30–45 minutes for approximately 3 hours. Stir in the toasted pecans during one of the final mixing stages.

Then freeze until completely set.

Use full-fat coconut milk rather than light coconut milk. The higher fat content gives the ice cream a creamier texture.
