Cheese Bread Recipe

Ingredients

For the Dough

  • 500 g all-purpose flour or bread flour

  • 7 g instant yeast

  • 2 tablespoons granulated sugar

  • 1 teaspoon salt

  • 250 ml warm milk

  • 60 ml warm water

  • 1 large egg

  • 50 g melted butter

  • 1 tablespoon olive oil

For the Cheese Filling

  • 200–250 g shredded mozzarella

  • 100 g shredded cheddar cheese

  • 2 tablespoons grated Parmesan, optional

  • 1 tablespoon chopped fresh parsley or coriander

  • ½ teaspoon garlic powder

  • ¼ teaspoon black pepper

For the Top

  • 1 egg, beaten

  • 50–75 g additional shredded cheese

  • 1 tablespoon melted butter

  • A pinch of dried oregano or mixed herbs, optional

Step 1: Prepare the Dough

Begin by combining the warm milk and warm water in a large mixing bowl. The liquid should feel warm but not hot. Add the yeast and sugar and stir gently.

Let the mixture sit for approximately 5–10 minutes. If using active dry yeast, it should become slightly foamy. Instant yeast can generally be mixed directly with the flour, but allowing it to sit briefly is also fine.

Add the flour and salt to the bowl. Then add the egg, melted butter, and olive oil.

Step 6: Second Rise

Cover the shaped dough loosely with a clean towel.

Allow it to rest for another 25–40 minutes.

During this time, the dough will become lighter and puffier.

Meanwhile, preheat your oven to 180°C (350°F).

Step 7: Add the Topping

Once the second rise is complete, brush the surface of the bread gently with beaten egg.

Sprinkle the remaining shredded cheese over the top.

You can also add a little dried oregano, Italian seasoning, or freshly chopped parsley.

For extra richness, drizzle or brush a small amount of melted butter over the finished bread after baking.

Step 8: Bake

Place the bread in the preheated oven.

Bake for approximately 25–35 minutes, depending on the size and shape of the bread.

If the top begins browning too quickly before the bread is fully cooked, loosely cover it with aluminum foil for the remainder of the baking time.
